In response to your message below:
This sort of data should be available from any sort of commercially
available dynamometer. It is certainly available from the Kin-Com
dynamometer in their "Continuous" way of collecting data for evaluation
using the isokinetic mode of exercise. The usual way to display this sort
of data however is as a torque (force)- angular displacement curve where
the accelerative and decelerative phases may be removed. These phases
obviously change the display of data if it is graphed as a torque-time
curve. Why do you wish to gather (or more particularly, display) data as a
torque-time curve?

Try Bosco and Conconi (I am not sure of the spelling for Conconi).
Also, you could try to contact companies that sell isokinetic machines
and ask them for these type of refernces.

I have a book with several graphs of human force-velocity and force-power
curves for eccentric and concentric conditions. The book is titled "Human
Muscle Power" and editors are N. Jones, N. McCartney and A. McComas.

We did con/ex/concentric contraction tests under isokinetic conditions for
the knee. The second reference show graphs of the sagittal knee moment
on several pages. So it is woth to look at, even it is written in German.
