You asked for ideas: here's one.
How about:
make plaster casts of the hands in question (in order to obtain an
accurate solid model of the hand(s));
use a 3-dimensional digitiser, these are readily avaialable, to create
a computer model of the hand;
calculate areas, etc. from the data obtained.
